Baked Ziti

Ingredients:
- 2 Tbl Olive Oil
- 3 Cloves Garlic, chopped
- 2 14.5 Oz Cans Diced Tomatoes, drained
- 1 6 Oz Can Tomato Puree
- 1 Tsp Thyme
- 1 Tsp Basil
- Salt (to taste)
- Black Pepper (to taste)
- Crushed Red Pepper (to taste)
- 1 Lb Dried Ziti, cooked
- 1/2 Cup Grated Parmesan, divided
- 1/4 Cup Grated Pecorino Romano
- 12 Oz Shredded Mozzarella, divided
Directions:
- Saute the garlic in the olive oil until lightly browned.
- Add the diced tomatoes, puree, and seasonings. Simmer covered for 10 minutes.
- When the sauce and pasta have cooled enough so that they will not melt the cheese, mix them together in a large bowl with the romano, half of the parmesan, and 8 oz of the mozzarella.
- Transfer to a lightly greased 9"x13" casserole.
- Sprinkle remaining parmesan and mozzarella over the top of the pasta.
- Bake 25 minutes at 400 degrees.
