German Potato Salad

Ingredients:
- 3 Lbs Small Red Potatoes
- 1 Onion, grated
- 1 Tbl Salt
- 2 Tbl Sugar
- White Pepper (Dash)
- 1/4 Cup Canola Oil
- 1/2 Cup White Vinegar
- 3/4 Cup Water
- Parsley, chopped
- Bacon, cooked and diced
Directions:
- Boil potatoes until "al dente". Peel and slice while hot.
- Add grated onion.
- Heat to boiling salt, sugar, pepper, oil, vinegar and water.
- Cool mixture until you can stick finger (clean!) in it.
- Pour over potatoes and onion.
- Add a little Parsley (for color).
- Let stand unrefrigerated a few hours.
- Garnish with bacon and parsley.
