Tomato Pie

Ingredients:
- 2 Cups Baking Mix (Bisquick)
- 2/3 Cups Buttermilk or Milk
- 1/4 Cups Grated Parmesan Cheese, divided
- 2 Large Tomatoes, seeded and thinly sliced
- 2 Tbls All-Purpose Flour
- 1 Small Sweet Onion, minced and divided
- 1/2 Cup chopped Fresh Basil, divided
- 1/2 Tsp Salt, divided
- 1/2 Tsp Pepper, divided
- 3/4 Cup Creamy Mustard/Mayo Blend (Dijionnaise)
Directions:
- Stir together baking mix and milk until blended.
- Pat into bottom and up sides of greased 9" pie plate
- Bake at 400 degrees for 7 minutes.
- Remove from oven and sprinkle with 1/4 cup cheese
- Toss Tomato with flour.
- Arrange one layer of tomato over cheese and sprinkle evenly with half of the onion, basil, salt and pepper. Repeat.
- Mix 1 cup cheese with mustard/mayo blend and top pie.
- Bake at 400 degrees for 24 minutes or until lightly browned.
- Let stand 10 minutes before serving.
