Veggie Lasagna

Ingredients:
- 1 1/2 Quarts Spaghetti Sauce
- 1 1/2 Lbs Spinach
- 1 Onion
- 2 Cloves Garlic
- 2 Lbs Ricotta Cheese
- 1/4 Lb Romano Cheese
- 3 Beaten Eggs
- 2 Tbs Parsley
- 1/2 Lb Mozzarella Cheese
- 1 Lb Lasagna Noodles
- 4 Zucchinis (thinly sliced)
Directions:
- Saute the onion and garlic.
- Combine the ricotta, romano, spinach, zucchini, onion, garlic and egg. Season with salt and pepper to taste.
- Cook the lasagna noodles.
- In a large dish, layer noodles, ricotta mixture, mozzarella and sauce. Make 2 or 3 layers. End with sauce on top.
- Cover with foil and cook 40 minutes at 350 degrees.
- Uncover and bake 10-15 minutes more.
