Veggie Lasagna

Ingredients:

Directions:

  1. Saute the onion and garlic.
  2. Combine the ricotta, romano, spinach, zucchini, onion, garlic and egg. Season with salt and pepper to taste.
  3. Cook the lasagna noodles.
  4. In a large dish, layer noodles, ricotta mixture, mozzarella and sauce. Make 2 or 3 layers. End with sauce on top.
  5. Cover with foil and cook 40 minutes at 350 degrees.
  6. Uncover and bake 10-15 minutes more.
Paul Newman's spaghetti sauce is a good one. I also add fresh roma tomatoes in my layers.
